Joycakes

strawberrycupcakes

Yesterday I had a sudden urge to create something delicious. I invested in a cupcake form weeks ago and I've only used it once (see here), hence I was itching to try some new recipes. I was also quite lazy and just looked around what I had at home and modified the recipe accordingly. I'm kinda on a diet (as always... :) so I wanted to make these healthier (read lower in calories) than usual cupcakes (I was shocked what goes into each of these little joyballs the last time I made them) thus I replaced sugar with sweetener and cream with yoghurt. I was actually surprised with how they came out and I'd be ashamed  to admit how long they lasted on the kitchen table. :D

Talking about healthy kitchen... I've been a bit uninspired lately. Any healthy food/cooking websites you could recommend? I'm bored of my usual salads.

Have a sweet weekend!

These cupcakes look amazing, I'm partial to a strawberry cake and these look like they're right up my ally.

This looks so delicious! I'm finding it to be such a coincidence you posted this, because I was just talking the other day about making a strawberry shortcake cupcake and that looks very similar to what I had been dreaming up!

i'm pretty much always on a diet too. i just don't consider it a "diet". always trying to eat as clean as possible (with the occasional frozen margarita or slice of pizza). i cook gluten free and use tons of garlic, red onions, fresh ground pepper, and vegetables in all my dishes. but for a delicious meal: cook your protein in some garlic and beer (i use gluten free). it gives the best flavor!

Hey Gabby, much better than artificial sweetener is agave nectar - it is low in calories and completly natural. I have tons of healthy blog links on my site especially at the end of this post: http://superhappyjohi.blogspot.com/2011/03/weight-loss-progress.html

Good luck and have fun with experimenting with new healthy ingredients!
Kisses.

Yum!!! I like to bake, but don't like to have it in the house afterwards because I will eat it!! This seems like a good compromise because it's healthier than the regular cupcake. Looks delish too. I might have to pick up some strawberries at the market this week.
